There was a time, not so long ago, that I was afraid to make soups. I would make them according to the recipe and they didn’t turn out. They’d be more like a stew than a soup, and that was in the crockpot, too! Everyone knows that making a meal in the crockpot adds moisture to the recipe.
So I gave up for awhile and stuck to recipes that did turn out. Meatloaf. Spaghetti sauce from scratch. Chili. Things that were practically no-fail.
But I craved homemade soups.
My mom, bless her, taught me how to make turkey soup, and I’ve got it nailed. Yes, I make my own broth and have a chockful of veggies and turkey in it, and it’s not like a stew.
This soup stole my heart.
This is perfect for anyone who loves the taste of meatball subs. It’s rich, hearty, filling like you cannot imagine and perfect for a crisp fall day, much like today!
It’s rich, tomato-y, cheesy and garlic-y. You’ll definitely want a second helping, but hold off for a bit, because I promise it’s more filling than you think! It’s hard to resist that second bowl!
You can definitely use actual meatballs in this recipe, but I chose not to. I chose to use cooked ground beef instead because I wanted the beef to be better distributed. I also found that using meatballs was a bit of a struggle to break up while eating it, and I’m all for instant gratification! I’m sure if you used smaller meatballs, you wouldn’t have this problem. The choice is definitely yours!
Start by cooking the beef, or making your meatballs and cooking them, and cooking up your onions and garlic.
