As it usually goes in winter, people usually get less exercise and eat more comfort foods.
As I write this post, I’ve been eating per the 21-Day Fix. It’s all well and good but it’s not as easy as it used to be to do a stint like this.
I prefer my salads and vegetables in the summer weather, because that’s when no one wants to cook, and it’s usually beside a BBQed burger and giant sesame seed hamburger bun, loaded to the hilt with all the fixings.
But I digress, this is why I’m doing the 21-Day Fix, despite craving a pound of pasta and half a cow right now.
If you’ve been following my blog for awhile, you know that I adore my comfort foods and I love anything that uses minimal ingredients. The less work I have to do to get food on the table, the better. This recipe fits the bill for both, and it’s amazing beside a 21-Day Fix salad. Just sayin’.
The Good Stuff
For this recipe, you need four ingredients, and only one requires a bit of forethought.
You’ll need a package of pre-made. pre-cooked frozen meatballs (or you can make your own, ahead of time), a jar of pasta sauce (or you can make your own), shredded mozzarella cheese, and store-bought pizza crust dough (I make my own in the breadmaker). You can also use a can of Pillsbury Biscuits, cutting each biscuit into four pieces.
Once the dough is made, it’s pretty easy-going. It’s a matter of greasing a pan, cutting the dough into bite-sized pieces, layering 20-25 meatballs over the dough, layering the sauce over those, and topping with the mozzarella. Finally, bake and serve.
Easy peasy, right?
Yes, and your family will love this meatball bake, especially if they like meatball subs. It’s the perfect cold-weather comfort meal and it’s terrific warmed up for lunch the next day as well. You can even freeze it for another time.
